Anarkaki Samosa
Cooking Time : 30-40 Minutes
Ingredients:
Pastry
400 grams plain flour
100 grams of grated cheese
A pinch of celery seeds
A pinch of Hing powder (Asafetida)
1 cup natural yogurt
75 grams of ghee
salt to taste
Filling
300 grams of onion rings
1 table spoon anardana seeds or Mango powder
1 tea spoon garam masala
2 pods of garlic- chopped finely
1 long green chili- chopped finely
50 grams of dry fruits such as sultana, almond flakes and cashew nut pieces
Oil for frying
salt to taste
Method:
1-Sift the flour. Add the other ingredients for the pastry and make a stiff dough with small amount of water. Keep kneading so that it becomes very smooth. Keep aside covered with a moist cloth.
2-Heat oil in a pan and fry the onions and garlic till the onion rings change colour. Remove from heat and add the remaining ingredients for the filling.
3-Make small balls from the dough. Roll the ball into a disc about 5” or 6” in diameter. Cut the disc into two halves. Pick up the disc and fold to form a cone by joining the cut edges with a smear of milk. Add the filling to the cone and then close the open end by joining the edges with a smear of milk.
4-Heat oil in a fry pan. Deep fry the Samosas till golden brown. Serve with Tomato sauce or Mint chutney.
