CHERRY CHICKEN PIZZA
Yield: 1 (12-inch) pizza
INGREDIENTS
• 1 (12-inch) Pre-baked pizza crust
• 1/2 cup (3 ounces) Dried Tart Cherries
• -- Butter
• 1 1/2 cups (6 ounces) Leeks, sliced thin
• 1 tablespoon (1 fluid ounce) Olive oil
• 1 1/2 cups (6 ounces) Skinless, boneless chicken breast, cooked and chopped
• 3/4 cup (3 ounces) Walnuts, toasted
• 3/4 cup (3 ounces) Mozzarella cheese, grated
• 3/4 cup (3 ounces) Smoked Gouda cheese, grated
DIRECTIONS:
1. Sauté leeks in butter until wilted.
2. Brush olive oil evenly over pre-baked crust. Spread leeks over pizza crust
3. Arrange cherries, chicken and walnuts over leeks. Sprinkle mozzarella and Gouda over all.
4. Bake at 450°F in a standard oven 7 to 9 minutes, or until cheese is melted.
5. Serve as an appetizer or main course.
