Egg Free Date And Walnut Cake

Ingredients:

1 cup white flour, Maida
1\2 teaspoon baking powder
1\2 teaspoon baking soda
1\4 teaspoon salt
100 grams margarine
3\4 cup sugar
3\4 cup milk
75 grams walnut halved, chopped
100 grams dates, soft pitted
50 grams raisins, golden
1\4 teaspoon nutmeg, grounded


Directions: one line for each direction. When saved the lines will be numbered.

Preheat oven to 375? F. Grease and dust an 8- by 2-inch round cake pan, with flour, knocking out excess.


Sift together flour, baking powder, baking soda and salt and keep aside.


Beat margarine and sugar with an electric mixer until pale and fluffy.


Alternately fold flour mixture and milk in batches, with a hand mixer until just combined.


Fold in walnuts, dates, raisins and nutmeg with a metal spoon, (don't over fold). Turn the mixture into the prepared pan and sprinkle the few walnuts and raisins on the top. Bake in the oven for about 20 -25 minutes or until a skewer inserted in the centre comes out clean and dry. Cool in the pan for 10 minutes, then invert onto racks and cool completely.
