Fat-free Rasmalai

Ingredients:
for Malai
16 oz fat free Ricotta cheese
1/2 cup sugar
1/8 tsp baking powder
1 tsp Cardamom powder
Ingredients for the Ras
1 quart evaporated skim milk
1/2 cup sugar
1 tsp cardamom powder
1 tbsp blanched almond pieces
Method:
Method for Malai 1. Pre-heat oven to 400º 2. In a shallow baking dish, mix the above ingredients well and spread evenly 3. Cover and bake at 400º for 20-40 minutes or till done 4. When cooled to room temperature, cut into several pieces (1 ½" x 1 ½" size)
Method for Ras 1. In a non-stick pot, boil the evaporated milk for about 15 minutes on low flame. 2. Add sugar, cardamom powder, almonds and stir. Cool it to room temperature. 3. Add the baked ricotta cheese pieces. Refrigerate and serve. Note: This may also prepared with regular or low fat ricotta cheese (reduce baking time to about 20 minutes) for the malai; and half & half for the ras.
