Polsi Pullao

Ingredients

- 3/4 Cup Oil
- 2 Black Cardamoms
- 1 Cinnamon Stick
- 6 Cloves
- 4 Black Peppercorns
- 1 Tsp Ginger / Garlic Paste
- 1 Tsp Red Chilly Powder
- 1 Tsp Salt
- 1 Tsp Green Chilly Ground
- 1 Cup Crushed Brown Onions
- 1 Cup Yoghurt
- 2 Potatoes Cubed
- 750 Gms Rice Cleaned And Soaked
- column A- 1 Kg Mutton
- 2 Medium Onions Sliced
- 1 Tbsp Ginger Finely Chopped
- 20 Black Peppercorns
- 10 Cloves
- 2 Cinnamon Sticks
- 1 Tsp Red Chilly Powder
- 2 Black Cardamoms
- 2 Green Cardamoms
- 1 Garlic Bulb
- 1 Tsp Salt
- 3 Tbsp Aniseeds
- 4 Tbsp Coriander Seeds
- 8 Cups Water

Instructions

Cook the meat with all the ingredients listed under COLUMN A till the meat is almost cooked and 4 cups of stock remain. Strain the meat and reserve the stock. In another pot, heat the oil, add the cardamoms, cinnamon, cloves, black peppercorns and ginger / garlic. Sprinkle a little water and stir for a couple of minutes. Add the red chilly powder, salt, green chilies, crushed onions and yogurt. Stir for a few minutes till the oil separates. Add the potatoes and the boiled mutton. Cover the pot and cook for 10 minutes. Add the reserved stock and when it cornes to a boil, drain the rice and add to the pot. Cook over a medium heat for 10 minutes. Lower the heat and simmer for 15 minutes.
